S'more Brownies, please!

For Easter I brought S'more Brownies to share at work. I made mine into big & small cupcakes. They were delicious. I'm just glad everyone ate them so I didn't have any to take home and overindulge.



























S'more Brownies
Crust:
*6 Tbsp unsalted butter, melted
*1 - 1/2 c crushed graham cracker crumbs
* 2 Tbsp sugar
* pinch of salt

Brownie:
* 8 Tbsp unsalted butter
* 4 oz unsweetened chocolate, chopped
* 1 c packed light brown sugar
* 3/4 c white sugar
* 1 - 1/2 tsp vanilla extract
* 1/2 tsp salt
* 4 lg cold eggs
* 1 c all purpose flour

Topping:
4 c large marshmallows

(Preheat oven to 325F)
Line an 8x8 in square baking pan with foil so it hangs over the edges by about 1 in. lightly butter (I butter sprayed 12 mini & 12 large cupcake molds, no foil)
Crust: Mix melted butter, crumbs, sugar and salt in bowl.
Press crumb mixture in to bottom of pan. bake until golden brown, about 20 mins.
Meanwhile, make brownie mix. Put butter and chocolate in microwave for 2 mins, stir, 2 more mins until melted. (I used a saucepan on the stove with about 1 in water. I add the butter and chocolate in a heatproof bowl that fit in the saucepan without touching water. Stir until melted.)
Stir in light brown sugar, white sugar, vanilla, salt. Add eggs ant beat vigorously until thick & glossy. Add flour & stir until incorporated.
Pour batter into prepared pan. Bake until top is crispy and toothpick comes out clean. About 40 - 45 minutes. (I baked the cupcakes for about 30 mins., 20 for the small ones)
Cut marshmallows in half or in quarters. Layer marshmallows across the top. Toast under the broiler until golden. About 2 minutes (Mine toasted quicker so keep a very close eye on it. I also rotated the pan.
Cool on rack, gently remove from pan. Cut into 12 (2 in squares)
